Recipe: Buffalo Dip...

Dearest Friends, 

Just in time for the Super Bowl. Many people have their own version of Buffalo Dip but I wanted to share mine as I try to substitute healthy options to the classic ingredients. Enjoy and Go Patriots! 

Buffalo Dip - Two Ways

8oz reduced fat cream cheese, softened
1/2 cup plain greek yogurt
1/2 cup Franks hot sauce
1/3 cup crumbled blue cheese
1/2 cup + 1/3 cup shredded cheddar cheese, reduced fat
1/2 package Trader Joe's organic riced cauliflower (or for a non-vegetarian option 1 package 

Preheat ove to 350 degrees F.
According to the package, microwave riced cauliflower for 3 minutes. If you're using chicken instead, chop strips into bite sized pieces. 
Combine cream cheese, yogurt, hot sauce, blue cheese, cauliflower (or chicken), and 1/2 cup of the shredded cheese. Note: I use a hand mixer for 1 minute to combine ingredients rather than stirring.
Spoon dip into a 1-quart baking dish. 
Bake 15 minutes. Take out and spread the 1/3 cup of shredded cheese on top. Place back in the oven for another 15 minutes or until the cheese is fully melted on top. 
Serve with vegetable sticks, corn chips or crackers.
